Almond Cake
Ingredients
Strawberry coulis:
Directions
1 Preheat oven to 350°F (180°C).
2 In a bowl, combine flour, ground almonds, salt, baking powder, and sugar.
3 Add vegetable oil and soy milk.
4 Whisk until batter is smooth.
5 Use margarine to grease bottom and sides of 8-in. (20-cm) square pan. Sprinkle with flour, shaking out excess.
6 Pour batter into prepared pan. Bake for about 40 to 45 minutes, or until a toothpick inserted near center of cake comes out clean.
7 Place the strawberries, hulled and halved in a saucepan. Add maple syrup, vanilla oil and lemon juice. Simmer over medium heat for 5 minutes.

- 1/2 tsp vanilla essence
- 1/2 teaspoon lemon juice
